Recently, Nuts.com asked me about my three favorite healthy snack foods as we approach Easter. And now that I can go back to snacking between meals (which I gave up for Lent), I had the chance to reflect on the power of snacking on healthy foods. Here are my 3 favorites:
Bananas and Salty Nuts: I know that this sounds like an Elvis Presley-inspired food, but I totally enjoy eating a banana topped with a few salty nuts. The combination of sweet and salty, and the combined creamy and crunchy textures is so satisfying!
Dried Fruit, especially mangoes! Mangoes are probably my favorite fruit. I love all of the varieties. But if they're not in season, I thank God for those Filipino companies that package dried fresh mangos that I can snack on all year long! I can eat these like potato chips! These remind me of my childhood and my home country the Philippines. I even like to add thin slices of dried mangoes to a salad with some chopped walnuts for a little sweet and tangy chew!
Fruit Smoothies: Because I live alone, I sometimes struggle keeping all of the fruit that I purchase fresh. So, as soon as I see that some fruit may be losing it's freshness, I blend these all up in a blender with some yogurt, ice and local honey for a delicious non-wasting-still-kinda-fresh fruit smoothie!
