Ingredients:
Cheese Pizza (as you would normally purchase from your favorite pizza shop)

  • 1 cup of cooked chicken cut into ¼ inch cubes
  • 1 white onion chopped and sautéed
  • ½ cup of barbecue sauce
  • ½ cup of fresh mozzarella cheese
  • 2 tablespoons of fresh minced basil

Instructions:
Order a cheese pizza from your favorite local pizza shop. When it gets to your house, preheat the oven to 450. Mix the cooked chicken, barbecue sauce, and sautéed onion in a bowl. 10 minutes before serving, transfer the pizza to a baking dish. Evenly distribute the chicken, onion, and barbecue sauce on top of the pizza. Top off the pizza with fresh mozzarella cheese and fresh basil. Put the whole pizza in the oven for 7-10 minutes or until the cheese is completely melted and browns. To enhance the barbecue flavors, have this easy to clean up meal outside on your porch or patio!

Last Monday I had a great visit with a couple hundred young adults at Pat Troy’s Irish Pub in Alexandria, VA for the last installment of their Theology on Tap. Mary Rose and her core team of dedicated (and rather cool) young adults called the series a “6-pack” of speakers. By the way, Mary Rose, you and your team ROCKED!

Check out their website! They also recorded the talk, which was entitled, “X Marks the Spot” It’s about the “sign of the cross” which basically makes us a target. It’s an ancient sign of an ancient faith that renews our lives when we grasp on and focus on the Cross of Jesus Christ. Hopefully you’ll enjoy it. If you do, pass it on to your family and friends and share with them the blessing of the Cross!

It was very impressive to see so many young adults gather to spend time with friends and to get to know more about the Catholic Faith. Actually, even though it’s a Catholic Sponsored event, I met several people who weren’t Catholic, and some, not even Christians. They just came to hear a different perspective of life. It’s a great witness and a great way to learn about each other through sharing a drink and a meal. Can’t you see why Grace Before Meals is such an important mission!

I have to admit, being around so many young adults like that made me feel young also. Even though I look young (I keep telling myself that), there are those days when I just KNOW I’m getting older. There was a young man there who went by “Dom.” He showed up because he heard that a breakdancing and martial arts priest was going to be presenting this last 6-Pack Theology on Tap session. He is in the military (obviously in very good condition) and explained how he shared my interests. Perhaps he thought I was going to do some moves? Thank God he didn’t challenge me to a “break-off.” I’m almost a decade and half older than him.

However, I couldn’t seem to get away with NOT doing a little breakdancing move. I tried to skirt the request from a person in the crowd – the first to raise her hand during the Q&A session. My quick thinking almost got me out of there until the owner of the Pub, Mr. Pat Troy (who by the way was running for a District Council Position), “forced” me to get up there and do some moves. Before I did that, I made sure everyone had their cameras and cell phone cameras in the “off and stowed away” position!

Not to worry, one of these days I’ll have to learn how to upload an event when I did a big martial art and break dancing sequence with a few other priests and parishioners for a parish event.

Ingredients:

  • ¼ cup of ketchup
  • ¼ cup of honey
  • ¼ cup of apple cider vinegar
  • 2 tablespoons of regular mustard
  • ¼ teaspoon of curry powder
  • ¼ teaspoon of paprika
  • ½ teaspoon of garlic powder
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 1-2 jalapeño or habanero peppers – Remove the stems
  • ¼ teaspoon of chili powder
  • 1 tablespoon of butter
  • ¼ cup of water

FYI: Habaneros are hotter.

Instructions:

Add all ingredients to a blender and pulse until jalapeños/habaneros are completely blended and incorporated with the rest of the sauce. Pour into a saucepan and cook over low heat to a light boil. To use for barbecue, brush over meat a few minutes before the meat is cooked. For use with hot wings, add a few tablespoons of sauce in a non-reactive bowl. Immediately after wings are cooked, add 4-6 wings to the bowl and mix in the sauce. Some of the dripping hot oil will mix with the sauce to help coat each of the wings.
