Description:
Resolve to eat healthier in 2009? Fr. Leo makes it easy to stay on track with this new series of webisodes focusing on healthy, veggie based dishes. Webisode 1 of 3.
Ingredients:
Chicken broth – large container
Light butter or margarine (2 tablespoons)
1 large butternut squash – cut into cubes
Celery - 2 stalks
1 white onion – chopped into large pieces
2 carrots
2 red potatoes
Garlic (1-2 cloves)
Oregano
Salt
Pepper
1 cup of white wine
Instructions:
Melt butter in large pot. Add garlic, carrots and half of the chopped onion. Cut butternut squash in half and then into small cubes. Add into pot along with diced celery, including the leaves. Season with salt, pepper and oregano. Sauté until vegetables are caramelized.
Add white wine and chicken broth until vegetables are covered. Bring to boil. Drain water and puree until smooth. Add liquid as needed. Serve hot.
