I had a great time for my less than 24 hour stay in Grand Junction, Colorado with the Diocese of Pueblo for their annual foundation dinner where I served as their keynote speaker.  What a wonderful welcome!img_84941Bishop Tafoya offered such a sincere example of welcome, hospitality and shepherding his people for almost 30 years! It was also a great time to meet some of the people who came to support the Diocese and the Grace Before Meals mission!

img_8514And, with the support of the Foundation Team, the Immaculate Heart of Mary parish staff, the Chair of the Board, the backing of St. Mary’s Hospital in Grand Junction, and the delicious meal prepared by Omar’s Catering, it was a splendid night with a purpose – to help the people in this vast, beautiful and mission diocese. 

I was especially surprised to have Omar’s crab dip.  Even in the middle of the country, this guy made a delicious creamy crab dip appetizer! Not bad for the Rocky Mountains that specialize more in southwestern spices and not necessarily seafood. And,  his beef wellington was also full of true goodness.  Just like the people of this diocese:  full of goodness!
