Ingredients (serves 4)

  • 4 hot dog buns, lightly sprayed with cooking spray
  • 8 tablespoons peanut butter
  • 4 bananas
  • Strawberry syrup or 4 tablespoons strawberry jam mixed with 2 teaspoons water

Instructions

Spray inside of each hot dog bun with cooking spray and place it open on grill pan. Once rolls are toasted, spread approximately 2 tablespoons of peanut butter inside each. Place peeled banana on roll as you would a hot dog. For fun, top hot dogs with strawberry “ketchup.” This great snack can be served with grapes.

Kanga-barbie kebabs! (Serves 2-4)

 

  • 2 pounds kangaroo meat, properly aged and cut into 1 inch chunks
  • 1 teaspoon salt and pepper
  • 1 onion chopped
  • ½ cup olive oil
  • 1 cup white wine
  • 1 cup mango juice (or one can orange juice concentrate)
  • ½ cup coconut milk

 

Combine oil, wine, juice, and coconut milk in a bowl.  Season meat with salt and pepper and allow to soak in marinade for about 4-5 hours.  When ready to cook, prepare grill pan over high heat.  Skewer meat with onions, and cook over grill pan 4-5 minutes on each side.  Since meat is very lean, keep it medium to rare in temperature.  Let rest and serve with salad.

I just received this little prayer reminder in an email. And so instead of sending it to my contacts, I thought to just pass it on to you.  For those who asked me about Japan, please know the next few weeks will offers some thoughts / insights about my trip there, as well as some pictures and food ideas!  So, stay tuned and in the meantime, I hope this 5 finger prayer can help inspire more prayer for us all!Peace!Fr. Leo  F I V E   F I N G E R   P R A Y E R1. Our thumb is nearest to us.  So begin your prayers by praying for thoseclosest to us. They are the easiest to  remember.  To pray for our lovedones is, as C.S. Lewis once said, a “sweet duty”.2. The next finger is the pointing finger. Pray  for those who teach,instruct and heal. This includes teachers,  doctors, and ministers. Theyneed support and wisdom in pointing others in the right direction.  We mightalso pray for those we point fingers at, especially those who sometimes hurtus.  They need our prayers very much, too.3. The next finger is the tallest finger.  It reminds  us of our leaders.Pray for the President, leaders in business and industry, andadministrators, our pastors, our Pope. These people shape our world andguide public opinion. They need God’s guidance very much.4.  The fourth finger is our ring finger.  Surprising to many is the factthat this is our weakest finger; as any piano teacher  will testify.  Itshould remind us to pray for those who are weak, in trouble or in pain.They need our prayers day and night. We cannot pray  too much for them.5.  And last of all comes our little finger; the smallest finger of all,which is where we should place ourselves in relation to God and to others.The pinky should remind us to pray for ourselves.  By the time we haveprayed for the other four groups, our own needs will be put into properperspective and we will be able to pray for yourself more effectively.  Andsometimes, we don’t even have to pray for ourselves.  While we’re busypraying for others, God is already at work, taking care of our own needs!(”And the Lord blessed Job when he prayed for his friends.” Job 42:10)Keep me in your prayers and know you’re remembered in mine as well.   MayGod continue to draw near to you and those you love and keep you safe!
