(“Coo-boo-yon” – short for black drum court bouillon.)

1 chicken breast fillet 5-6 ounces

1 tsp salt

1/2 tsp pepper

Tony Chachere’s Seasoning

4 Tbs olive oil

2 Tbs butter

8 oz. coconut milk

1/4 cup bourbon

Uncle Ben’s 90 Second Rice (regular white)

Trinity – red/green bell peppers, onion, celery (counts as one ingredient)

1/4 cup soy sauce

1/4 cup chopped peanuts

2 Tbs chopped cilantro

Instructions:  Season both sides of chicken breasts with salt, pepper, and Tony Chachere’s Seasoning.  Heat 2 Tbs of olive oil to smoking point.  Seer for 3 minutes on each side.  Add butter and bourbon to pan.  Flambé bourbon.  Add coconut milk and simmer together for another 5-7 minutes, or until chicken is cooked through.  To prepare the rice, heat olive oil in a large nonstick pan.  Sauté Trinity until onions are translucent.  Add soy sauce.  Add most of the peanuts and cilantro, saving a small handful for the end of the cooking process.  Add rice and mix until fully incorporated.  Add more fresh peanuts and cilantro as a fresh tasting garnish.

  • Hello Father Leo:

    I was wondering if you know anything about the Slow Food USA movement. They are rather secular in their approach to doing things but seem to be in line with Grace Before Meals. I have not found anything either pro or anti Catholic and there is nothing on the web about Slow Food advocating population control.

    If you have any information concerning the Slow Food Movement, I would appreciate it.

    Hello, I had the oportunity to watch you and Booby Flay of the Food Network do the Fajita Throwdown, in which you won. Congratulations.

    I also noticed that you have a black belt in Tae Kwon Do along with being an master of Arnis, a martial art from the Philippines.

    I am also a Catholic and I study Tae Kwon Do. The question I have is this. Since all of our gifts and abilities come from God, how can we use them to draw more people to Him? For me I enjoy fishing and martial arts. How can I use these gifts and abilities to draw people to God?

  • Hi Father Leo, I wanted to let you know the grace we say before our meals. I find it more meaningful to my young grand-children. We thank God for what we are thankful for in this day. The answer is most of the time for food, family and some other good thing that happen to us during the day. could be a visits from a friend, a play date after school with a friend,cookies that nana make for us to have after school and so on. I find that we all have to think of what we really think a gift to be. WONDERFUL IDEA YOU ARE WORKING ON. GOD BLESS YOU AND YOUR PROJECT.

  • Hello Fr. Leo,

    I noticed that you like to cook and eat a lot of pasta. Here’s tip I recently discovered while experimenting in my own kitchen. Add a herb or garlic to your water while cooking your pasta. So far, I’ve only used onion, garlic or fennel seed, but I see potential for so much more. The chosen herb really adds to the flavor of the pasta. Mmmmm.

    I would like to begin by saying I saw your show on EWTN. I have been inspired this year to cook !!! and cook out side my comfort zone….but I ran into a bit of a slump and that’s when I saw your show and have been reinvigorated! I have checked out your web site, blog ,videos and bought your book…I guess I am a fan!
    My question is in the EWTN episode you discussed wearing the apron and why it was like putting on the armor of God…..could you please tell me where I can get a transcript of that show or would be so kind as to go over it again for me ….Thank you!

    Heb 5:13 For every one that useth milk is unskilful in the word of righteousness: for he is a babe.
    Heb 5:14 But strong meat belongeth to them that are of full age, even those who by reason of use have their senses exercised to discern both good and evil.

  • Nick: It means we all have to grow up. We can’t only rely on milk, candy and basically eat childish food. At some point, we’ll have to learn how to eat “meat” (which is why PETA is kinda’ theologically incompatible with their anti-meat campaigns), or eat the real food that God wants to give us. Peace!
