Grilled Peaches (Serves 4)

4 peaches, halved, with seeds removed

1 tablespoon butter

1/4 cup white wine

Fresh mint leaves

1 cup mascarpone cheese

1 cup heavy whipping cream, whipped

2 limes

2 tablespoons of honey

Instructions.

Prepare peaches by cutting in half and removing the seeds.  Melt butter on a grill pan on medium-high heat.  Place peaches flesh-side down and allow to cook for about 2 minutes.  Add a few mint leaves to the pan.  Pour the white wine, and partially cover the peaches, allowing the peaches to partially steam.  Cook peaches for about 2-4 minutes or until the peaches are soft.  Remove peaches and allow to cook.  (Note: the texture for cooking the peaches depends on how ripe they are when you begin to cook them.  Try and get peaches that are ripe, but not too soft.)  In a separate bowl, add the lemon, honey, mascarpone, and whipped cream, and gently mix to incorporate the flavors.  To plate, place peaches in the center of the plate, top off with whipped cream, and garnish with mint leaves.  A chardonnay goes perfectly with this dish!

  • Lemons or limes? The directions say lemons, but the ingredients list says limes. I bet it would taste delicious either way!

  • I actually used limes. I like the sweetness of the limes over the tartness of the lemons. One way or another, I think you’ll find this a delicate sauce that you could use on just about any type of dessert! Peace!

  • I crunch up biscotti (mixed with a little melted butter) and “stuff” the peaches before cooking. Adds a nice texture.

  • Dear Fr. Leo, I am about to prepare this dish for the first time. It does not specify what parts of the lemons are used. I am assuming just the juice and hope this is the case, as I am entering this dish in the peach cookery contest here at our 55+ clubhouse. Wish me good luck

  • Good Luck! Yes, a squirt of the lemon (or lime) juice just to get the steam going for the peaches. Enjoy.
