Ingredients:
2 chicken breasts, butterflied
4 slices cooked ham
4 slices provolone cheese
6-8 ounces tomato sauce
1 clove garlic
2 tablespoons olive oil
½ white onion, finely diced
1 cup seasoned breadcrumbs
salt and pepper
Instructions:
Season chicken on both sides with salt and pepper. Place a slice of ham, cheese, then another piece of ham on the inside cut of the chicken. Fold over and coat with bread crumbs. Heat large frying pan with olive oil, medium heat. Cook chicken for 3-4 minutes on one side. Remove chicken and prepare sauce. Add tomato sauce, garlic, and onions to cover the bottom of the pan, salt and pepper to taste. Mix together. Return the chicken, uncooked side, to the sauce. Cover and cook for 5-7 minutes. Remove lid and top off chicken with extra slice of provolone cheese and re-cover. Cook for another 2-3 minutes until cheese has melted. Top off with herbs for garnish and extra fresh taste.

I am a new subscriber and this looks delicious.
That said, we can get the Pan Fried Prime Rib and Root Veggies, too? I’m greedy, I know. Or is it in your cookbook?
I have shared info on your site with so many since I heard about you on The Catholic Channel. Most of those I’ve told are not Catholic- I just consider you through these writings to be an excellent ambassador (or should I say apostle).
One person I mentioned the site to is our new Assitant pastor and my new pal Fr. Florente Marcelo. He says he knows you. I think he is just a name dropper, but I’m fond of him anyway.
